- 1/2 cup sliced bell pepper (any color)
- 1/2 cup sliced snap peas
- 1 clove garlic, minced
- 1 teaspoon grated fresh ginger
- 2 tablespoons stir-fry sauce (store-bought or homemade - see note below)

Instructions:
- In a small bowl, toss the chicken pieces with soy sauce and cornstarch. Set aside for at least 10 minutes.
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the chicken and stir-fry until cooked through and lightly browned, about 3-5 minutes. Remove the chicken from the skillet and set aside.
- Add the broccoli, carrots, and bell pepper to the skillet. Stir-fry for 3-4 minutes until slightly tender-crisp.
