Chicken and Veggie Stir-Fry

 


Chicken and Veggie Stir-Fry is a quick, flavorful, and healthy dish featuring tender pieces of chicken stir-fried with a colorful medley of crisp-tender vegetables. Tossed in a savory sauce, this dish is a versatile and customizable meal that can be adapted to your favorite vegetables and seasonings. It's a perfect weeknight dinner option that comes together in minutes.

Ingredients:

  • 1 boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 cup broccoli florets
  • 1/2 cup sliced carrots
  • 1/2 cup sliced bell pepper (any color)
  • 1/2 cup sliced snap peas
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • 2 tablespoons stir-fry sauce (store-bought or homemade - see note below)
  • Cooked rice or noodles, for serving (optional)
  • Sesame seeds, for garnish (optional)

Instructions:

  1. In a small bowl, toss the chicken pieces with soy sauce and cornstarch. Set aside for at least 10 minutes.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the chicken and stir-fry until cooked through and lightly browned, about 3-5 minutes. Remove the chicken from the skillet and set aside.
  4. Add the broccoli, carrots, and bell pepper to the skillet. Stir-fry for 3-4 minutes until slightly tender-crisp.
  5. Add the snap peas, minced garlic, and grated ginger to the skillet. Stir-fry for another minute until fragrant.
  6. Return the cooked chicken to the skillet.
  7. Pour the stir-fry sauce over the chicken and vegetables. Stir well to coat everything evenly. Cook for another 1-2 minutes until the sauce has thickened slightly.
  8. Serve hot over cooked rice or noodles, if desired. Garnish with sesame seeds, if using.

Note on Stir-Fry Sauce (Homemade Option):

You can make your own stir-fry sauce by combining:

  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon ground ginger (or more fresh grated ginger)
  • A pinch of red pepper flakes (optional, for heat)

Whisk all ingredients together until well combined.
