Roasted Honey-Balsamic Cauliflower

 


Ingredients:

  • 1 large cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Prepare cauliflower: Toss the cauliflower florets in a large bowl with olive oil to coat.
  3. Create the marinade: In a small bowl, whisk together the balsamic vinegar, honey, thyme, salt, and pepper.
  4. Combine: Pour the marinade over the cauliflower and toss to coat evenly.
  5. Roast: Spread the cauliflower on a baking sheet and roast for 25-30 minutes, or until tender and slightly browned.
  6. Serve: Serve immediately as a side dish or as a vegetarian main course.

Tips:

  • For extra flavor, add minced garlic to the marinade.
  • To add a bit of crunch, sprinkle with chopped nuts or seeds before serving.
  • This roasted cauliflower is also delicious served over quinoa or rice.
