Zucchini Scampi

 



A light and flavorful dish featuring tender zucchini noodles tossed in a garlicky, buttery lemon sauce with juicy shrimp.

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 3 medium zucchini, spiralized into noodles
  • 4 cloves garlic, minced
  • 1/4 cup white wine
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 lemon, zested and juiced
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions:

  1. Cook the shrimp: In a large skillet, heat olive oil over medium-high heat. Season shrimp with salt and pepper. Cook until pink and opaque, about 2-3 minutes per side. Remove from skillet and set aside.
  2. Cook the zucchini noodles: In the same skillet, add the spiralized zucchini. Cook for 3-4 minutes, or until tender-crisp. Season with salt and pepper.
  3. Make the sauce: In a small bowl, whisk together melted butter, lemon juice, lemon zest, and red pepper flakes.
  4. Combine: Return shrimp to the skillet with zucchini noodles. Pour the sauce over the shrimp and zucchini. Toss to coat.
  5. Serve: Garnish with Parmesan cheese and fresh parsley. Serve immediately.

Tips:

  • For a quicker meal, use pre-made zucchini noodles.
  • Add other vegetables to the dish, such as cherry tomatoes or spinach.
  • Serve over a bed of brown rice or quinoa for a more complete meal.
