A light and flavorful dish featuring tender zucchini noodles tossed in a garlicky, buttery lemon sauce with juicy shrimp.
Ingredients:
- 1 pound large shrimp, peeled and deveined
- 3 medium zucchini, spiralized into noodles
- 4 cloves garlic, minced
- 1/4 cup white wine
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1/4 cup freshly grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 lemon, zested and juiced
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions:
- Cook the shrimp: In a large skillet, heat olive oil over medium-high heat. Season shrimp with salt and pepper. Cook until pink and opaque, about 2-3 minutes per side. Remove from skillet and set aside.
- Cook the zucchini noodles: In the same skillet, add the spiralized zucchini. Cook for 3-4 minutes, or until tender-crisp. Season with salt and pepper.
- Make the sauce: In a small bowl, whisk together melted butter, lemon juice, lemon zest, and red pepper flakes.
- Combine: Return shrimp to the skillet with zucchini noodles. Pour the sauce over the shrimp and zucchini. Toss to coat.
- Serve: Garnish with Parmesan cheese and fresh parsley. Serve immediately.
Tips:
- For a quicker meal, use pre-made zucchini noodles.
- Add other vegetables to the dish, such as cherry tomatoes or spinach.
