Ingredients:

  • 4 boneless, skinless chicken breasts (about 6-8 ounces each)
  • 1/4 cup olive oil
  • Juice of 1 large lemon
  • 2 cloves garlic, minced
  • 2 tablespoons fresh herbs, chopped (such as rosemary, thyme, oregano, or parsley, or a combination)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. In a medium bowl or resealable plastic bag, whisk together the olive oil, lemon juice, minced garlic, chopped fresh herbs, salt, and pepper.
  2. Add the chicken breasts to the marinade, ensuring they are fully coated.
  3. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for more intense flavor.
  4. Preheat your grill to medium heat. Lightly oil the grill grates to prevent sticking.
  5. Remove the chicken from the marinade and discard the remaining marinade.
  6. Grill the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the juices run clear. Cooking time will vary depending on the thickness of the chicken breasts.
