Instructions:
Prepare the Sweet Potatoes:
- In a medium bowl, toss the sweet potato rounds with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper until evenly coated.
Grill the Sweet Potatoes:
- Preheat your grill to medium heat. Lightly oil the grill grates.
- Arrange the sweet potato rounds in a single layer on the grill.
- Grill for 4-6 minutes per side, or until tender and slightly charred. You should be able to easily pierce them with a fork.
- Once cooked, remove the sweet potatoes from the grill and let them cool slightly before dicing them into bite-sized pieces.
Prepare the Spicy Mayo:
- In a small bowl, whisk together the mayonnaise, sriracha hot sauce, and lime juice until smooth and well combined. Taste and adjust the amount of sriracha for your desired level of spiciness. Set aside.
Warm the Tortillas:
- Warm the tortillas according to package instructions. You can lightly grill them for a smoky flavor, warm them in a dry skillet, or microwave them briefly wrapped in a damp paper towel.
Assemble the Tacos:
- For each taco, place a spoonful of diced grilled sweet potatoes in the center of a warm tortilla.
- Top with your desired toppings, such as shredded cabbage, red onion, cilantro, avocado, and cheese.
- Drizzle generously with the spicy mayo.
- Serve immediately with lime wedges on the side.
