Sticky Turkey Stir-Fry

 


This quick and easy stir-fry features tender turkey pieces coated in a sweet and savory sticky sauce, tossed with your favorite vegetables.

Yields: 4 servings Prep time: 15 minutes Cook time: 15-20 minutes

Ingredients:

For the Turkey:

  • 1 pound ground turkey or turkey breast cut into bite-sized pieces
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon garlic powder
  • Pinch of black pepper

For the Sticky Sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha or other chili sauce (optional, for heat)
  • 1 teaspoon cornstarch mixed with 2 tablespoons cold water

For the Stir-Fry:

  • 1 tablespoon vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 cup snap peas or snow peas  
  • Cooked rice or noodles, for serving
  • Sesame seeds and chopped scallions, for garnish (optional)

Instructions:

  1. Prepare the Turkey: In a medium bowl, combine the ground turkey (or turkey pieces), 1 tablespoon of soy sauce, 1 teaspoon of cornstarch, ground ginger, garlic powder, and black pepper. Mix well and set aside.

  2. Make the Sticky Sauce: In a small bowl, whisk together the 1/4 cup of soy sauce, honey (or maple syrup), rice vinegar, sesame oil, and sriracha (if using). In a separate small bowl, whisk the 1 teaspoon of cornstarch with the cold water until smooth. Set both aside.

  3. Stir-Fry the Vegetables: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the sliced onion and cook for 2-3 minutes until slightly softened. Add the minced garlic and cook for another minute until fragrant.

  4. Add the Remaining Vegetables: Add the sliced bell peppers and broccoli florets to the skillet. Stir-fry for 3-5 minutes until they are tender-crisp. Add the snap peas (or snow peas) and cook for another 1-2 minutes until bright green. Remove the vegetables from the skillet and set aside.

  5. Cook the Turkey: Add the seasoned turkey to the same skillet. If using ground turkey, cook, breaking it up with a spoon, until it is cooked through and no longer pink. If using turkey pieces, stir-fry until they are cooked through and lightly browned. Drain any excess liquid from the skillet.

  6. Add the Sauce and Vegetables: Pour the sticky sauce into the skillet with the cooked turkey. Bring to a simmer and then stir in the cornstarch slurry. Cook, stirring constantly, until the sauce thickens and becomes glossy.

  7. Combine and Serve: Add the cooked vegetables back into the skillet with the sticky turkey. Toss gently to coat everything evenly with the sauce.

  8. Serve: Serve the sticky turkey stir-fry hot over cooked rice or noodles. Garnish with sesame seeds and chopped scallions, if desired.
