Yields: 2 servings Prep time: 15 minutes Cook time: 15 minutes
Ingredients:
For the Salmon:
- 2 salmon fillets (about 6 oz each)
- 2 tablespoons soy sauce
- 1 tablespoon mirin (sweet rice wine)
- 1 teaspoon sugar
- 1/2 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1 teaspoon sesame oil
- Vegetable oil, for cooking
For the Noodles and Vegetables:
- 2 portions (about 6-8 oz) pre-cooked udon noodles
- 1 tablespoon vegetable oil
- 1/2 red bell pepper, thinly sliced
- 1/2 yellow bell pepper, thinly sliced
- 1/2 cup broccoli florets
- 2 scallions, thinly sliced
- 1 tablespoon sesame seeds, for garnish
Instructions:
Prepare the Teriyaki Marinade:
- In a small bowl, whisk together the soy sauce, mirin, sugar, grated ginger, minced garlic, and sesame oil.
Marinate the Salmon:
- Place the salmon fillets in a shallow dish. Pour the teriyaki marinade over the salmon, ensuring both sides are coated.
- Let the salmon marinate for at least 10 minutes, or up to 30 minutes in the refrigerator.
Cook the Vegetables:
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the sliced bell peppers and broccoli florets. Stir-fry for 3-5 minutes, or until the vegetables are tender-crisp.
- Remove the vegetables from the skillet and set aside.
Cook the Salmon:
- Add a little more vegetable oil to the same skillet if needed.
- Carefully place the marinated salmon fillets skin-side down (if they have skin) in the hot skillet.
- Cook for 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork. The teriyaki glaze should be slightly caramelized.
Cook the Udon Noodles:
- While the salmon is cooking, prepare the udon noodles according to the package instructions. Usually, this involves briefly boiling or soaking them in hot water until they are loosened. Drain well.
Assemble and Serve:
- Add the cooked udon noodles and the stir-fried vegetables back into the skillet with the cooked salmon.
- Toss gently to combine everything and heat through.
- Divide the teriyaki salmon and udon noodle mixture between two bowls.
- Garnish with sliced scallions and sesame seeds.
- Serve immediately and enjoy!
