Turkey Zucchini Burgers

 



Turkey Zucchini Burgers are a lighter and healthier alternative to traditional beef burgers. They combine lean ground turkey with shredded zucchini, which adds moisture and nutrients. Seasoned with herbs and spices, these burgers are flavorful and juicy, often served on buns with your favorite toppings. They're a great way to sneak in extra vegetables and enjoy a satisfying meal.

Here's a basic recipe:

Yields: 4 burgers Prep time: 15 minutes Cook time: 15-20 minutes

Ingredients:

  • 1 pound ground turkey
  • 1 medium zucchini, grated
  • 1/4 cup breadcrumbs (panko or regular)
  • 1 egg, lightly beaten
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for cooking)
  • 4 burger buns
  • Your favorite burger toppings (lettuce, tomato, onion, cheese, etc.)

Instructions:

  1. In a large bowl, combine the ground turkey, grated zucchini (squeeze out any excess liquid), breadcrumbs, lightly beaten egg, chopped onion, minced garlic, chopped parsley, dried oregano, salt, and pepper.
  2. Gently mix all the ingredients together until just combined. Be careful not to overmix, as this can make the burgers tough.
  3. Divide the mixture into 4 equal portions and shape them into patties about 3/4 inch thick.  
  4. Heat the olive oil in a large skillet over medium heat.
  5. Cook the burgers for 6-8 minutes per side, or until they are golden brown and cooked through. The internal temperature should reach 165°F (74°C).  
  6. While the burgers are cooking, lightly toast the burger buns if desired.
  7. Assemble the burgers by placing a cooked patty on the bottom bun and topping with your favorite ingredients. Place the top bun over the toppings.
  8. Serve immediately and enjoy!
